Uttapam is a popular South Indian breakfast dish,
similar to a pancake, made from fermented rice and urad dal (black gram) batter. It is typically topped with vegetables, making it a nutritious and tasty option. Here’s a detailed recipe to make delicious Uttapam at home:
Ingredients:
For the Batter:
- 1 cup rice
- 1/4 cup urad dal (split black gram)
- 1/4 teaspoon fenugreek seeds (methi)
- Salt to taste
- Water, as needed
For Topping:
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped tomatoes
- 1/4 cup finely chopped green bell peppers (capsicum)
- 1/4 cup grated carrots
- 2 green chilies, finely chopped
- 1/4 cup chopped coriander leaves (cilantro)
- Salt to taste
- Oil, as needed for cooking
Instructions:
Preparing the Batter:
Soak the Rice and Dal: Rinse the rice and urad dal separately. Soak the rice with fenugreek seeds and urad dal in water for at least 4-6 hours or overnight.
Grinding: Drain the water from the soaked rice and dal. In a blender, grind the urad dal and fenugreek seeds first to a smooth batter using a little water. Transfer it to a large bowl. Then grind the rice to a smooth batter using water as needed. Combine both batters and mix well.
Fermentation: Add salt to the batter and mix thoroughly. Cover the bowl and let the batter ferment overnight or for 8-10 hours in a warm place. The batter should rise and become airy.
Making the Uttapam:
Preparation: Once the batter is fermented, stir it gently. If the batter is too thick, add a little water to get a pouring consistency.
Prepare the Topping: Mix the chopped onions, tomatoes, bell peppers, grated carrots, green chilies, and coriander leaves in a bowl. Add a pinch of salt and mix well.
Cooking Uttapam:
- Heat a non-stick pan or tawa (griddle) on medium heat. Grease it lightly with oil.
- Pour a ladleful of batter onto the center of the pan and spread it gently to make a thick pancake (about 1/4 inch thick).
- Quickly sprinkle a portion of the mixed vegetables evenly over the batter.
- Drizzle a little oil around the edges and on top of the uttapam. Press the toppings gently with a spatula so they stick to the batter.
- Cook on medium heat until the base is golden brown and crisp (about 2-3 minutes). Flip the uttapam and cook the other side for another 2-3 minutes until the vegetables are slightly roasted and the batter is fully cooked.
Serving: Serve hot with coconut chutney, tomato chutney, or sambar.
Tips:
- Ensure the batter is not too runny; it should be slightly thick to hold the toppings.
- You can customize the toppings as per your preference. Some popular additions include grated cheese, cooked corn, or finely chopped spinach.
- If you prefer a spicier uttapam, you can add more green chilies or sprinkle some red chili flakes.
