Aloo Kulcha
Aloo Kulcha is a delicious North Indian flatbread stuffed with a spiced potato filling. Here's how you can prepare it at home:
Ingredients:
For the Dough:
- 2 cups all-purpose flour (maida)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1/4 cup yogurt (curd)
- 1 tablespoon oil
- Water, as needed
For the Potato Filling:
- 3-4 medium potatoes, boiled and mashed
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger paste or grated ginger
- 1 teaspoon garlic paste or minced garlic
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon dry mango powder (amchur)
- Salt to taste
- Fresh cilantro (coriander leaves), chopped
Other Ingredients:
- Butter or ghee for brushing
- Chopped fresh cilantro for garnish
- Chaat masala (optional, for sprinkling)
Instructions:
1. Prepare the Dough:
- In a mixing bowl, combine all-purpose flour, baking powder, baking soda, salt, and sugar.
- Add yogurt and oil. Mix well.
- Gradually add water and knead into a soft and smooth dough. Cover with a damp cloth and let it rest for 1-2 hours.
2. Prepare the Potato Filling:
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add green chilies, ginger paste, and garlic paste. Sauté for a minute.
- Add red chili powder, garam masala, and dry mango powder. Mix well.
- Add mashed potatoes and salt. Mix thoroughly and cook for 2-3 minutes until the filling is well combined and aromatic.
- Stir in chopped cilantro. Remove from heat and let the filling cool completely.
3. Make Stuffed Kulchas:
- Divide the rested dough into equal portions and roll each portion into a ball.
- Take one portion, flatten it slightly, and place a portion of the potato filling (about 2-3 tablespoons) in the center.
- Bring the edges of the dough together to seal the filling inside. Flatten the stuffed dough ball gently.
- Dust with flour and roll out into a circle of about 6-7 inches in diameter, ensuring the filling doesn't come out.
- Heat a tawa or griddle over medium-high heat. Place the rolled kulcha gently on the hot tawa.
- Cook for about 1-2 minutes until bubbles start to appear on the surface.
- Flip the kulcha and cook the other side for another 1-2 minutes.
- Brush the cooked side with butter or ghee. Flip again and brush the other side with butter or ghee.
- Press gently with a spatula to ensure even cooking and a crisp texture.
- Remove from the tawa and transfer to a plate. Repeat with the remaining dough and filling.
4. Serve Aloo Kulcha:
- Garnish with chopped cilantro and sprinkle with chaat masala (if using).
- Serve hot with yogurt, pickle, or any curry of your choice.
