For the marinade:

  • 500 grams of lamb or goat meat, cut into cubes
  • 1 cup plain yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon ground fennel seeds
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground black pepper
  • Salt to taste

For the gravy:

  • 3 tablespoons vegetable oil or ghee (clarified butter)
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 teaspoons Kashmiri red chili powder (adjust to taste for heat and color)
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground garlic
  • 1/2 teaspoon ground fennel seeds
  • 1/2 teaspoon ground cumin
  • 2-3 green cardamom pods
  • 1-inch cinnamon stick
  • 2-3 cloves
  • Salt to taste
  • Fresh coriander leaves for garnish (optional)

Preparation:

  1. Marinate the meat: In a large bowl, combine the cubed meat with yogurt, ginger-garlic paste, ground fennel seeds, ground cumin, ground cinnamon, ground cardamom, ground cloves, ground black pepper, and salt. Mix well to coat the meat evenly in the marinade. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.

  2. Prepare the gravy: Heat the vegetable oil or ghee in a heavy-bottomed pan or Dutch oven over medium heat. Add the chopped onions and sauté until they turn golden brown and caramelized.

  3. Add spices: Add the Kashmiri red chili powder, ground coriander, ground turmeric, ground ginger, ground garlic, ground fennel seeds, and ground cumin to the pan. Stir well to combine and cook for a couple of minutes until the spices are fragrant.

  4. Cook the meat: Add the marinated meat to the pan along with any excess marinade. Stir well to coat the meat in the spice mixture. Cook for 5-7 minutes, stirring occasionally, until the meat is browned on all sides.

  5. Add tomatoes and whole spices: Add the finely chopped tomatoes to the pan and mix well. Then, add the green cardamom pods, cinnamon stick, and cloves. Stir to combine.

  6. Simmer: Reduce the heat to low, cover the pan, and let the Rogan Josh simmer gently for about 1 to 1.5 hours, or until the meat is tender and the gravy has thickened to your desired consistency. Stir occasionally and add water if necessary to prevent the gravy from drying out.

  7. Adjust seasoning and garnish: Once the meat is cooked through, taste the Rogan Josh and adjust the seasoning with salt if needed. Garnish with fresh coriander leaves if desired.

  8. Serve: Rogan Josh is traditionally served hot with steamed rice, naan, or roti. Enjoy the rich and aromatic flavors of this classic Kashmiri dish!
