Basic receipe for naan
Ingredients:
- 2 cups all-purpose flour (maida)
- 1/2 cup warm water
- 1/4 cup plain yogurt
- 2 tablespoons melted ghee or butter
- 1 teaspoon sugar
- 1 teaspoon active dry yeast
- 1/2 teaspoon salt
- Additional flour for dusting
Preparation:
Activate the yeast: In a small bowl, mix warm water (not too hot or it will kill the yeast), sugar, and active dry yeast. Let it sit for about 5-10 minutes until the mixture becomes frothy, indicating that the yeast is activated.
Prepare the dough: In a large mixing bowl, combine the flour, salt, yogurt, melted ghee or butter, and the activated yeast mixture. Mix well until a rough dough forms.
Knead the dough: Transfer the dough to a clean, floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. You may need to add a little more flour if the dough is too sticky.
First rise: Place the kneaded dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free place for about 1-2 hours, or until it doubles in size.
Preheat the oven: If you have a pizza stone, place it in the oven and preheat it to the highest temperature possible (usually around 500°F or 260°C). If you don't have a pizza stone, you can use a baking sheet.
Divide and shape the dough: Once the dough has doubled in size, punch it down to release the air bubbles. Divide the dough into equal-sized portions (usually 6-8 portions) and shape each portion into a ball.
Roll out the naan: Take one dough ball and roll it out into an oval or teardrop shape, about 1/4 inch thick. You can use a rolling pin and some extra flour to prevent sticking.
Bake the naan: Carefully place the rolled-out naan onto the preheated pizza stone or baking sheet. Bake for 2-3 minutes, or until the naan puffs up and the bottom is golden brown. You can also broil the naan for an additional minute to get a charred effect on top.
Brush with ghee: Once the naan is done baking, remove it from the oven and brush the top with melted ghee or butter for added flavor and moisture.
Serve hot: Serve the naan warm with your favorite Indian curries or dishes. Enjoy!
