Ingredients:
1 lb lamb or goat meat, cubed
2 onions, finely chopped
3 tomatoes, chopped
3-4 cloves of garlic, minced
1-inch piece of ginger, grated
2 green chilies, chopped (adjust according to your spice preference)
2 teaspoons coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
Salt to taste

Fresh cilantro leaves for garnish
Water as needed
Instructions:
Heat oil in a large pot or skillet over medium heat. Add chopped onions and sauté until they turn golden brown.
Add minced garlic, grated ginger, and chopped green chilies. Sauté for another minute until fragrant.
Add the chopped tomatoes to the pot and cook until they become soft and mushy,
stirring occasionally.
Once the tomatoes are cooked down, add the spices - coriander powder, cumin powder, turmeric powder, red chili powder, garam masala, and salt.
Mix well and cook the spices for a couple of minutes to enhance their flavor.
Add the cubed lamb or goat meat to the pot and mix it well with the spices and onions. Cook for a few minutes until the meat is browned on all sides.
Pour in enough water to cover the meat and bring it to a boil. Once it boils, reduce the heat to low, cover the pot with a lid,
and let it simmer for about 1.5 to 2 hours or until the meat is tender and cooked through. Stir occasionally and add more water if needed to prevent the curry from drying out.
Once the meat is tender and the curry has reached your desired consistency,
check for seasoning and adjust salt and spices if needed.
Garnish the lamb or goat curry with fresh cilantro leaves and serve hot with steamed rice, naan, or roti.
