Here's a basic recipe for making the Nihari masala:








 Ingredients: 500 grams mutton, cut into pieces 2 onions, finely sliced 1/4 cup cooking oil or ghee 2 tablespoons ginger-garlic paste Salt to taste 2 tablespoons yogurt 1 teaspoon red chili powder (adjust to your spice preference) 1/2 teaspoon turmeric powder 1 tablespoon coriander powder 1 teaspoon cumin powder 1/2 teaspoon garam masala powder 1/2 teaspoon black pepper powder 2-3 green chilies,





 slit Fresh coriander leaves for garnishing Lemon wedges for serving For Nihari Masala: 1 tablespoon fennel seeds (saunf) 1 tablespoon coriander seeds 1 tablespoon cumin seeds 1 teaspoon black peppercorns 1/2 teaspoon cloves 1/2 teaspoon cardamom pods 2-3 dried red chilies 1-inch cinnamon stick 1 bay leaf Instructions: Dry roast all the ingredients mentioned under "Nihari Masala" in a pan until they become fragrant. Grind them to a fine powder once cooled.


 Heat oil or ghee in a heavy-bottomed pot. Add sliced onions and sauté until golden brown. Add ginger-garlic paste and sauté until the raw smell disappears.


 Add mutton pieces to the pot and fry until they are slightly browned. Add salt, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, and black pepper powder. Mix well. Add yogurt to the pot and cook until the oil separates.


 Pour enough water to cover the mutton pieces. Add the ground Nihari masala powder and mix thoroughly. Cover the pot and cook on low heat until the mutton is tender and the gravy is thickened.


 This may take around 2-3 hours, depending on the tenderness of the meat. Once the mutton is cooked and the gravy reaches the desired consistency, add slit green chilies and simmer for a few more minutes.


 Garnish with fresh coriander leaves and serve hot with naan or rice. Serve lemon wedges on the side for extra tanginess.
