Ingredients:
For the Bhaji:
2 cups mixed vegetables (potatoes, cauliflower, peas, carrots), chopped
1 large onion, finely chopped
1 capsicum (bell pepper), finely chopped
3 large tomatoes, finely chopped
1/2 cup cooked and mashed green peas
4-5 cloves of garlic, minced
1-inch piece of ginger, grated
2-3 green chilies, finely chopped
1/2 cup chopped coriander leaves
2 tablespoons Pav Bhaji masala
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
Salt to taste
2-3 tablespoons butter
2 tablespoons oil
For serving:
Pav (soft dinner rolls)
Butter for toasting pav
Chopped onions and coriander leaves for garnish
Lemon wedges
Instructions:
Boil the Vegetables:
Boil the mixed vegetables until they are soft. You can use a pressure cooker to speed up the process.
Mash the Vegetables:
Mash the boiled vegetables, ensuring a chunky texture.
Prepare the Bhaji:
In a large pan, heat oil and butter together.
Add minced garlic, grated ginger, and chopped green chilies. Sauté until the raw smell disappears.
Add Vegetables:
Add the finely chopped onions and sauté until they turn translucent.
Add the finely chopped tomatoes and cook until they become soft and the oil starts to separate.
Spice it up:
Add Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix well.
Add Mashed Vegetables:
Add the mashed mixed vegetables and cooked green peas to the pan. Mix thoroughly.
Mash and Cook:
Use a potato masher to mash the vegetables directly in the pan. Continue to cook on low heat, stirring occasionally.
Adjust Consistency:
Add water as needed to achieve the desired consistency. The bhaji should be thick and not too runny.
Finish with Butter:
Add butter to the bhaji and let it melt. Mix well.
Garnish:
Garnish with chopped coriander leaves and keep the bhaji warm.
Prepare Pav:
Cut the pav (dinner rolls) into halves.
Heat a tawa (griddle) and toast the pav with a generous amount of butter until they are golden brown.
Serve:
Serve the hot Pav Bhaji with toasted pav, chopped onions, coriander leaves, and lemon wedges on the side.
