500 grams boneless chicken pieces
1 cup thick yogurt
1 tablespoon ginger-garlic paste

2 tablespoons cornflour or rice flour
2 tablespoons all-purpose flour (maida)

1 tablespoon finely chopped ginger
2-3 green chilies, chopped

Instructions:
In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, salt, cornflour (or rice flour), all-purpose flour, and egg (if using). This forms the marinade.
Add the chicken pieces to the marinade, making sure each piece is well-coated. Marinate for at least 2 hours, preferably overnight for better flavor.
Heat oil in a deep fryer or a heavy-bottomed pan over medium heat.
Fry the marinated chicken pieces in batches until they are golden brown and cooked through. Drain excess oil on paper towels.
In a separate pan, heat 2 tablespoons of oil for seasoning. Add chopped garlic, ginger, and green chilies. Sauté until they turn golden brown.
